Fettuccine Alfredo originated in a small restauran

Fettuccine Alfredo originated in a small restaurant located in Piazza Rosa (now known as Galleria Colonna). In 1908, Alfredo's wife, Ines, gave birth to their first child, Armando (later known as Alfredo II). After the birth, Ines was quite exhausted, and Alfredo, concerned for her health, wanted to help her regain her strength with nourishing foods. In this setting, the idea for the dish was born. Alfredo prepared fresh noodles mixed with butter and Parmesan cheese himself. He prayed to St. Anna, the protector of pregnant women, and served the dish to Ines, saying, “If you don’t like it, I’ll eat it myself.” Ines enjoyed the meal immensely and suggested that they add it to the menu of their small restaurant. This simple yet delicious dish eventually became famous worldwide.
