Courses inspired by Italy’s regions paired expertly with wines from around the world brought to you in Chianti’s La Porta Santa Room.

Rejoice in what the land provides us with a hand-crafted meal that uses the freshest ingredients from fields, the farm and the orchards. At a cooking school your glasses, plates and hearts are filled with the bounty of the crops and the gift of family and friendship. Tastes of world on your fork and in your glass delivered by your culinary tour guide, the incomparable Fabrizio Bazzani. Whether it’s finding the right notes and rhythms in a piece of music, or the right tones and flavors in a great bottle of wine, Sean and Dave know how to create something special that not only entertains, but really hits the spot. Like the saying goes – “Great minds drink alike”.

On June 15th at Boca Bistro, great minds are going to eat and drink alike. And who knows…we might be able to convince a special guest to make an appearance. We can dream, can’t we? Plus, everyone attending the dinner will be entered to win two tickets to see Dave Matthews at SPAC!

Dreaming Tree Sauvignon Blanc – The Sauvignon Blanc is fresh and juicy with tropical fruit aromas of passion fruit and kiwi. Finishing crisp and clean with hints of grapefruit and zesty lime.

With – Tuna Nachos – Wonton Chips, sesame encrusted tuna, wasabi aioli, sriracha aioli, seaweed salad

Dreaming Tree Chardonnay – The Chardonnay is golden straw in color, with baked pear and peach flavors that jump out of the glass. Toasty and rich up front, finishing crisp and elegant. This well-balanced, medium-bodied wine is easy to enjoy and will bring a taste of the Central Coast right to your home.

With – House-made coca bread, brie, fontina, poached pear, balsamic, arugula

Dreaming Tree Pinot Noir – The Dreaming Tree Pinot Noir is a blend of Pinot Noir from some of the best vineyards in California, with flavors and aromas of black cherry, wild strawberry, and toasty caramel. Complex with generous fruit and supple tannins. It pairs well with roast chicken or pork, grilled salmon, and mushroom risotto.

With – Boca “Oh Boy” – Boca “Doughboy”, chicken, cheese, scallions, house-made dough

Dreaming Tree Cabernet Sauvignon – The Cabernet Sauvignon displays classic aromas of blackberry, cherry, and cassis are wrapped in toasted caramel and soft, mouthfilling tannins. It’s elegant and supple. A fun start or end to any meal or friendly gathering. Enjoy with grilled flank steak, BBQ ribs, or vegetable kebabs.

With – Pig Ribs – Slow cooked spare ribs, house barbeque sauce, cucumber salad

Dreaming Tree Crush – The Dreaming Tree Crush is a blend of the California’s finest varieties, this wine has some great raspberry jam and vanilla oak characters on the nose, it has juicy mixed berry flavors, and full-but-soft and approachable tannins. A wonderful wine, enhanced by such foods as barbecue ribs, Vietnamese-style pork sandwiches, or vegetarian stuffed poblano peppers.
