Last Wednesday, April 17th, Chianti il Ristorante welcomed a gathering of culinary enthusiasts for an unforgettable exploration of flavors from the Veneto region in Italy. Executive Chef Fabrizio Bazzani and Sommelier Jonathan Stewart of Frederick Wildman collaborated to create a unique six-course dinner paired with the esteemed Santi wines.
The evening commenced with a delightful first course: a savory sabajon with black truffle and parmesan spuma, elegantly paired with the refreshing “Sortesele” Pinot Grigio Valdadige DOC. This light and flavorful start set the tone for an evening of culinary exploration.
The journey continued with seared radicchio endive adorned with hazelnut sage butter and sunchokes mash, perfectly complemented by the vibrant notes of the Infinito Rosé Bardolino Chiaretto. The delicate balance of flavors danced harmoniously on the palate, leaving guests eagerly anticipating the next course.
For the third course, guests were treated to ricotta gnocchi with white asparagus ragu, showcasing the artistry of Italian pasta-making. The delicious gnocchi shared the spotlight with the velvety “Ventale” Valpolicella Superiore, which elevated the dish to new heights.
As the evening progressed, guests were treated to a sumptuous fourth course: stuffed quail breast with “Paestum” sausage, adorned with a marsala reduction and onion agrodolce. The robust flavors of the “Solane” Valpolicella Ripasso Classico Superiore elevated the dining experience, leaving a lasting impression on every palate.
For the fifth course, a succulent venison served alongside an exquisite amarone reduction, accentuated by amarena cherries and dandelion with fried polenta. Teamed with the luxurious “Santico” Amarone della Valpolicella Classico, this dish mesmerized the palate, unveiling an intricate array of flavors.
To conclude this culinary odyssey, guests indulged in a decadent dessert of raspberry sorbet, dark chocolate mousse, and quince apple, perfectly paired with the effervescent Prosecco Rosé from the Lamberti Family.
